Panchmel Daal Makhni .

Heyya Folks! Hope everyone is doing well. I’ve been travelling a lot recently and hence missed out on writing and posting blogs. So today I’ve brought in this famous North Indian dish- Daal Makhni on my platter. As I’m an hardcore Maarwari, people were not fond of this dish at home. This was my first attempt at making this and it turned out to be beyond Perfect!


I haven’t made it the traditional way using just the Black Urad daal. I have used 5 very very nutritious lentils namely- Black Urad (Whole Urad), Rajma (everyone’s favourite), Bengal Gram (Chana Daal), Masoor Daal and Whole green Daal .

This recipe serves around 5.

Preparation time: 1 hour.

Things required:

200 gms of mixed daal. It is readily available in the market, pre-mixed.
100 ml Fresh Cream.
1 cup Tomato Puree. (200 ml approx)
50 gms Butter.
1 TBSP Chilli Powder.
1 TBSP Garam Masala
1 TBSP Powdered Cumin (Seka Jeera)
50 gms Ginger Garlic Paste ( Keeping the Ginger Concentration low)
Salt To Taste.


Boil the daal for 20 minutes. Leave it in the pressure cooker for 10 mins before opening the lid.

Next Put the butter in a Wide-Bottomed Pan (Kadhai) , allow it to melt by constantly stirring it, else it will burn. Next pour in the Ginger-Garlic Paste and saute the mixture. I said low Ginger as we don’t want the dish to have that evident Ginger punch. Does not go with the daal.

Next add the Tomato puree after you start getting the heavenly aroma of the Garlic-Butter Mix.

Next Add all the dry ingredients i.e the Spices. You may also add Curry Leaves. But I have not used  it in my recipe. Next add the boiled and sieved Daal mix and loads of water. Completely submerge the daal and stir it for 5 mins.

After you are happy with the spices and the taste, add the cream . The cream will absolutely change the way your daal looks. Just dont be scared of the sudden turnabout .


Stir it after every 5 minutes for atleast 30 mins. Yes, a lot of patience but once it starts to thicken, its gonna be worth the wait. Post 30 minutes, once you are satisfied with the consistency, turn off the gas and let it cool. It is gonna look something  like this.
